For regular food, eating vegan is not that big of a deal. When it comes to desserts, though, vegan choices can be sorely lacking. You would think ordering a dessert from a specialty vegan restaurant would be passable, if not good. Yet I have felt disappointed, dejected even, from seriously bad vegan desserts.
Eating the low-fat versions of milk ice cream cream doesn't cut it...I just want to eat more. And if I do, then I feel bad about it. Double whammy. I've actually eaten MORE calories AND I berate myself for the eating it all. I'm better off really savoring the good stuff. I find I am satisfied and want it less often.

This recipe requires 1 tablespoon of lemon juice, 1 tablespoon ice cream of grated lemon peel, 1 10-ounce package of frozen strawberries (thawed), 1 can of whipped, heavy cream and two-thirds of a cup of sweetened and condensed coconut milk. Put the strawberries, lemon juice and lemon peel into your Ninja Blender 1100. Blend at high speed for 20 seconds or until it gets smooth. Turn down the speed to low and remove the blender's cover. Add the condensed milk in a regular stream into this mixture. Finally, remove the strawberry mixture by folding it onto whipped cream. To make into hard ice cream, allow it to sit in the freezer for 4 hours.
Let's say you're making it for a baby shower or infant's birthday. You can get a cake mold in the shape of a teddy bear, rocking horse, baby, building blocks, whatever you can find at the store.
Almond milk is my favorite. The lower amount of sugar the better. Hemp milk is an excellent alternative, possibly the healthiest, but is more expensive. Soy milk is better than cows milk, but still comes with its own baggage as it has been linked ice cream thyroid problems. Sheep milk is better than cows milk but should be used with caution. Coconut milk is great for recipes and shakes.
Remove mold and add your second flavor (we'll say chocolate.) Do the same with the second flavor as the first. Once the mold is full, remove the inner portion and return it to the carton, leaving a second shell of chocolate inside the strawberry. Return mold to freezer for another forty-five minutes.
